Processing Methods: Natural vs Washed

Natural process coffees are dried inside the cherry, creating bold, fruity, sometimes fermented flavors. Washed process coffees have the fruit removed before drying, producing cleaner, brighter, more acidic cups. Try both and discover your preference — many drinkers love naturals for filter and washed for espresso.

Ethiopia — The Birthplace of Coffee. Ethiopian coffees are known for explosive fruit flavors, floral aromatics, and bright acidity. Our selection includes washed lots from Sidama (Rosso's Spring Forward) and natural processed lots with berry-jam intensity (Devil's Head). Best enjoyed as pour-over or filter.

Colombia — Volcanic Soil, Bold Flavors. Colombian coffees from Nariño and Quindio deliver chocolate, caramel, and tropical fruit notes. Try Rosso's Pink Lady (balanced, approachable) or Upside Down Chiroso (experimental, fruit-forward with enhanced fermentation).
