Why Our Bacon Is Different

Most supermarket bacon is wet-cured in a brine solution. Our bacon from Pioneer Butchery is dry-cured — a traditional method where the meat is rubbed with salt, spices, and herbs and left to cure slowly over several days. The result is a more concentrated bacon flavor, firmer texture, and no excess water or chemical additives.

All Pioneer Butchery bacon is made from Alberta-raised pork and produced in small batches. Each product is hand-sliced and packaged fresh.

How to Cook Dry Cured Bacon

Dry-cured bacon has a different texture than wet-cured bacon. Here are our recommended cooking methods:

  • Pan-fry: Place strips in a cold pan and cook over medium heat for 3-4 minutes per side. Dry-cured bacon renders more fat as it cooks.
  • Bake: Lay strips on a baking sheet and bake at 400 degrees F for 12-15 minutes. This gives you evenly crispy bacon with less splatter.
  • Microwave: Place strips between paper towels and microwave on high for 1-2 minutes. Quick and easy for busy mornings.
